Is it OK to use a 12v SLA battery with an ESC? Many of the ESC s available do not say they're suitable for SLAs, only NiMh, NiCad, LiPo.

You can use them without any doubt,
may be the low voltage safety mechanism of those newer ESC's doesn't react correctly as SLA's where quite outdated in most vendors opinions.
LiFePo4 is the direct replacement for SLA types, 4S LiFePo4 replaces 6S SLA (12V). If the ESC supports LiFePo4 mode you can use it without any disadvantages.

Volts are volts, no matter what the chemistry of the battery is. The esc will only be able to spence the voltage of the battery, not what type of battery is connected. Some ESC have low voltage cut offs to protect Lipos etc but they work with any battery as long as the voltage is with the operating range.
