I'd have thought 20-30khz was adequate bandwidth for 8-bit resolution of servo movement (sufficient for a model sub I think) up to say 6-8 channels. You would only need to update every 100millseconds or so. My reflexes aren't sharper than 130 milliseconds, and that's when I know what is coming e.g. online reflex test http://www.happyhub.com/network/reflex/

I used to work on commercial and miltary Sonar for C-Tech LTD.
I know it would work, but it would cost to much me thinks.
