I have not messed with it, and I am sure that those that have messed with it have not done so in a while, so things may have changed, but the reason that a gyro will not work with a sub for a leveler is that a gyros job is not to level, but it is to be a damper against instabilities. Therefore, it will reduce the rate of pitch change in the sub, or in any craft that you choose, and cause it ti be naturally stable, but it will not necessarily return to the angle that it left from. A leveler is designed to return it to the preset level, so basically it is a gyro with a heading hold. A heading hold gyro may work, but this may be a more expensive option. This is how I understand it, though there may be more experienced ones here that can help give a greater understanding.
