Pictures of nuke boat anchors will be hard to find as they are a "mushroom" style anchor mounted underneath the hull. They are designed to fit into the shape of the hull so they don't affect the sea water flow around the hull. I saw the picture you are talking about and it was shot when the boat was in drydock and th anchor was let down part way.
Actually the anchor looks a lot like surface boat anchors. They have two flutes. Your right about them being flared on the bottom so they conform to the hull. This is for 688's, Tridents, Seawolf and Virginia. I'm not sure when the switch from the mushroom anchor was made.
